What do you mean by W11 master account? do you mean it's on W11 now? this is very confusing to me

It never happens by mistake.
I have a local account and also use onedrive and i never ever had this issue.
Which means at some point you did something that triggered this change

the only thing I have with my email is Outlook as I do remote work. Would that trigger this?

Right click on the windows icon in the task bar then click "computer management"
Browse to "Local users and groups" -> "Users"
Right click then select "new user"

Pretty much anything that is Microsoft in the OS will log you into your Microsoft account almost everywhere. That includes outlook.

Might have to bite the bullet. MS is getting more and more invasive in our machines. Might be time to look into something else

My computers have been attempting to have me "upgrade" them to W11, but to think they would do it on their own is highly doubtful.

if you go into settings, accounts, and your info, there's a button to "sign in with a local account instead"

Sorry if my wording was wrong: after turning on the computer the Admin/local user account had my name and email instead of just being a standard administrator account. Somehow Microsoft was a

I only added my email into Outlook, no other app or service has that information.

No but the content of the old profile is still available in C:\\Users\\
You can access it from the new profile and get what you want from it.
